32. Pan Seared Scottish Salmon at Bootleggers Modern American Smokehouse

There have been lots of changes at Bootleggers Modern American Smokehouse in a short time. The restaurant opened in a quiet north Phoenix strip mall about two years ago, and owner Rick Phillips (also the man behind EaterAZ, the Arizona Taco Festival, and Arizona BBQ Festival) opened a second eatery in Old Town Scottsdale not long after that. The restaurants’ executive chefs have included well-known names such as Matt Cater, James Fox, and Stephen Jones — and though none have stuck, Bootleggers in Phoenix continues to be a great neighborhood spot. 

On the restaurant’s new(ish) food menu you’ll find a selection of sharable starters, creative tacos, and elevated entrees. And it’s in the large plates that you’ll see the biggest departures from what the restaurant’s usually done; they include a giant bone-in pork chop and excellent chicken dish and overall make for an upscale departure from the usual ‘cue house fare. My favorite option is the pan seared Scottish salmon, a dinner that’s surprisingly light for a restaurant with “smokehouse” in the name. With the entree you get a filet of fish wrapped in perfectly crisp pan-seared skin atop a bed of black forbidden rice. A subtle shallot vinaigrette fills out the dish, which is perfect for summer. 

And if you can’t go to a place named Bootleggers without eating something meaty and tinged with smoke, I suggest you try the Piggly Wiggly cocktail. It’s as much fun to drink as it is fun to say and features bacon fat-infused scotch, sweet vermouth, and coffee and chile bitters for a new take on a classic Manhattan. Garnished with bacon-wrapped cherry it’s practically a whole starter or dessert.
