31. Peking Duck at Hong Kong Asian Diner

There are lots of shortcuts you could take when making Peking Duck. You could use pre-frozen ducks, for example. Or ducks that have already been cleaned and de-headed. You could even skimp on the type of oven you use, since buying a dedicated roasting oven that exposes the meat to open flames can cost thousands of dollars. But your duck would not be the best. That honor goes to a restaurant in Tempe.

At Hong Kong Asian Diner,  the owners spare no expense of time or money and it shows. They use whole ducks to make their Peking Duck and roast each one in a special oven that helps get the skin extra crisp. It’s a difference you can taste: the restaurant’s version of this classic dish is easily the best in town. Your order includes a plate of crisp, fatty duck skin surrounded by a halo of soft white buns; on the side, a handful of thinly sliced green onions and a bowl of hoisin sauce. 

It’s up to you to build miniature sandwiches of duck skin, onions, and sauce. If done properly, each bite will reward you with contrasting flavors and textures that balance out in a beautiful way. There’s the pillow-y softness of the buns that gives way to the crunch of each slice of skin and a perfect balance between the sweet hoisin sauce and the subtle bite of the scallions. Pro-tip: if you ask ahead of time, the chef can use some of the roasted duck meat that follows in another dish.
