4. Goma Ramen at Posh Improvisational Cuisine

Some of the best, most successful dishes come about because a chef wants to recreate an unforgettable meal he or she had somewhere else. Such is the case with the goma ramen at Posh Improvisational Cuisine in Scottsdale. 

This rich ramen broth takes inspiration from a bowl of ramen chef Josh Hebert fell in love with while living and working in Japan, specifically from a bowl used to eat at a ramen shop in the Gotanda neighborhood of Tokyo. When he came back stateside, he recreated it with his own unique twist.

A lot goes into the complex, layered flavor of the ramen broth — including pork fat, garlic, shallots, ginger, and sesame paste. The result is a broth that's almost sweet, but mostly nutty with a distinctive sesame flavor that still manages to be subtle. With a pile of perfectly-cooked ramen noodles inside and a topping of julienned leeks and carrots, shisito peppers, slabs of char-sui pork, and a sprinkle of sesame seeds, it's a bowl of ramen that's become a classic for many Phoenix diners.
